This is a delicate white cheese made by Charlie Westhead at Neal’s Yard Creamery in the Wye Valley using pasteurised goat’s milk from Tim and Helen Wallace at Treworgan farm in Herefordshire.
Firm when young, softening as it ages and with a smooth lactic flavour and delightful lemony tang. Great sliced and grilled or in salads.
Not suitable for vegetarians.
